Mornings here start about five, and we like them slow and methodical. Coffee’s brewing. The fire for the day is lit. We stack the wood, check the messages, and fix a cup of coffee . Delivery trucks are already heading out, and the wholesale side rolls for six.

In the market, we’re prepping for you: cracklins are cut, pork skins are dropping, and boudin and sausage is in the steamers warming up. Boudin balls and egg rolls are made fresh. It’s almost time.

Second pot of coffee’s on for our neighbors. Let’s get everything cooking. Meat’s getting cut, stuffed, and seasoned just right. It won’t be much longer now. Y’all come join us. We’ll be ready at 7 with a hot cup of coffee.
